Winemaking; Handpicked 26th March. 75% Chilled Destemmed, 25% W/Bunch Carbonic 5 days, destemmed. Plunges twice daily during peak ferment, 12 days on skins. Pressed to separate VC to finish ferment, then rack/splashed for Malolactic Fermentation in Seasoned French (puncheons) and remainder Seasoned French Hogs.
January; Racked, Vegan Fining, light filtration.
Bottled on 4th February 2024.
Wine; Fantastic perfume, Cranberry, framboise, stewed/cold Rhubarb, cherry, cola. Smells and tastes like Gamay! Nice W/Bunch, dried herbs, pissaladiere, red fruits. Keeps rolling and rolling on the palate. Just right on the acid. Incredible length of flavour. Fantastic vintage.
Production; 150 Dozen.
Halliday Review; Whole bunches locked up in open fermenters for a four-day carbonic maceration then destemmed with 14 days on skins. A light, very bright crimson. Lovely, lifted aromatics of freshly picked raspberries, cranberries, bright florals and mountain herbs. In the mouth, this is brightly fruited and perfectly balanced by the wine's juicy acidity and light, gently crunchy tannins. Very well done and a fantastic summer red to be served ever-so slightly chilled.
